Spring greens colcannon
It’s Saint Patrick’s Day on 17 March so why not have a crack at this super tasty Irish classic

Ingredients

750g potatoes
4 Coop streaky bacon rashers
250g bag Coop sliced spring greens
1 tbsp local unsalted butter
4 local eggs

Method

1. Peel the potatoes and cut into chunks

2. Boil for 15 mins, or until tender, then drain

3. Chop and fry the bacon rashers until golden

4. Add the sliced spring greens and fry for a few more mins until wilted

5. Mash the potatoes with butter, season with freshly ground black pepper and stir in the bacon and spring greens

6. Serve each with a poached local egg, and some more black pepper
